I had fried rice at the chinese place and the rice grains were separated from each other. Hw to make rice for fried rice where rice grains are separated from each other.

Add little oil and salt while cooking rice. This will make rice grains separated from each other.

Wash the rice, dry it on clean cloth for 1 hour. take some oil fry the rice for 10 minutes on low heat and cook it with enough water. After cooking rice and discarding all water. Spread the rice on a plate. Mix soya sauce into the rice you will have perfect rice for fried Rice.

Dear Sucheta,
I do it in two ways.
1. Boil rice as you would with lots of water amd when it is three fourths cooked ( that is you are able to cut the cooking rice with your nails easily) , remove from fire and drain the rice of extra water and spread it on a plate to cool. If you make fried rice with this the grains will not stick together.
2. Soak the rice for at least half an hour, drain the extra water and keep aside. Heat oil in the pressure cooker, add the soaked and drained rice. Mix well till the rice gets hot to the touch. Then add 1 and 1/2 cups of water if it is Basmathi rice you are using and enough salt to taste. Close the cooker, put the weight on Just as the whistle goes put it off. When the cooker cools remove and spread the rice.
Use it as you like. Both the types will give you separate grained fried rice.
