I love punjabi food and I guess there are lots of people out there who loves paneer,roti,naan... Lets share punjabi recipes in this thread
Jeera Rice Simple but tasty
Ingredients
1 cup Basmati rice ,2 tsp Jeera (cumin seeds) ,2 tbsp Cashewnuts optional,
3 Whole peppercorns ,2 Bay leafs ,3 Cloves ,2 Cinnamon sticks ,1 Onions, sliced ,2 tbsp Ghee,Salt To Taste

Method:
Wash the rice and soak in water for half an hour. Heat ghee in a heavy saucepan, add cashewnuts. Fry until brown. Take them out and keep aside.
Add onions , bayleafs, cloves, cinnamon sticks, cumin seeds, peppercorns to the same ghee and fry for a while. Add the rice , salt, water and stir. Cover with a lid and simmer the flame. Cook until the rice is done. Serve jeera rice hot with and spicy curry or raita.

Boondi RaitaIngredients

2 cups - Yogurt
2 handful - Boondi
1 tsp - Sugar optional
1/2 tsp - Dry mint leaves
1 tbsp - Coriander leaves
1/2 tsp - Roasted jeera powder
A pinch of - Garam masala powder
A pinch of - Black pepper powder
A pinch of - Red chili powder
A pinch of - Black rock salt powder
Salt to taste

Method
Soak Boondi in warm water for 1 minute and squeeze out the water and then add to raita. This helps in squeezing out excess oil.
Beat yogurt and sugar well. Then add boondi, mint and coriander leaves, mix well with yogurt. Sprinkle jeera powder, garam masala, black pepper, red chili, black salt and mix in.
Serve raita chilled after 2 hours, if you like boondi very soft.
