Baby Corn Soup

10 baby corn (Cut into small pieces)
4 tomatoes made into fine puree (if not you can use ready made puree also)
Water 3-1/2 cups
Butter 1/2 tbsp.
Green chilly 3 - 4 (Better avoid this, if you have stomach problem; add black pepper powder after removing the soup from the fire)
Black pepper powder 1/4 tsp.
Bay leaf.
Salt to taste

Along with the tomato puree, add the green chillies also and make it a fine paste. Add bay leaf and cut baby corns to the heated butter in a pan; when it is fried add the tomato green chilly puree, and boil it. When it boils add salt and cook till the corn pieces becomes soft. (If you have not added green chilly after removing the soup from fire, add pepper powder according to the taste). Garnish it with fresh coriander leaves and cooked sweet corn.

The same soup can be served to non-dieters by garnishing it with a tbsp of fresh cream.

Carrot Soup

Carrots grated 3 to 4 cups
Tomato 1 (made into fine paste)
Water 2 cups
Black pepper powder 1/2 tsp.
Salt to taste.

In a pan, add the grated carrot and tomato paste along with 1 cup of water and cook till the carrot turns tender. Now grind the carrot along with salt and peeper powder. You can serve it chilled or luke warm.

While having Chappati you can have the following as a side dish. It is a healthy one and low calorie one too that will help the dieters

Raitha

Take one onion one tomato and 2 green chilies and ½ sp lemon juice.

Chop onion and tomato. Put in a bowl.
Cut green chilies into tiny pieces.
Add this to tomato and onion.
Add salt and lemon juice. Mix well.
Serve with chapatti. It goes well with chappati.
You can add grated carrot, cucumber (and in season a handful of grated mango too) also in this.

Planning for a good vacation. Will definitely make it to Mumbai. I know you are a great cook too. And a health conscious person too. Why not post your recipies also here. But when I come there will definitely treat you with my cooking. You too make it to Chennai soon.

This is a soup, those who wish to slim down.

Ingredients:
Horse gram or Kollu - ¼ cup
Tamarind paste - 1 tbsp
Salt, Haldi
Red chillies - 3,4
Gram dhal - 1 tsp
Dhaniya - 2 tsp
Pepper - 1 tsp
Jeera - 1 tsp
Methi seeds - ¼ tsp
Khus khus - 1 tsp
Copra - 2 tbsp (or grated coconut)
Hing - ½ tsp
Ghee - 1 tsp
Red chillies - 2
Mustard seeds - 1 tsp
Curry leaves - few

Roast the horsegram in dry pan and soak in the water for 3 to 5 hours. (If you are planning to make it in the next day morning, soak it over night). Pressure cook the horse gram for 5 whistles. Use just one cup of water. Drain the water and keep it aside. (This water is very healthy and you can use it in the soup).

Roast red chillies, gram dhal, dhaniya, pepper, jeera, methi seeds, khus khus, copra and hing in ghee and grind it to a fine paste and add it with 1/4th of the dhal. Mix tamrind paste, haldi, salt and the drained water and bring it to boil. Then add the remaining horsegram and pressure cook it again for another 3 whistles. Temper the soup with mustard seeds, red chillies and curry leaves in 1 tbsp of ghee.

This is a thick soup and is very filling.

Note:
You can add thin sliced onion, 5 to 6 pods of garlic and 1/2 tbspn grated ginger to it while adding the ground paste to give more taste.

Oh yeah, we all go for that. I cant resist ice creams or milk shakes. Will do more of Surya Namaskarams the next day. But still, we can atleast try these recipes to help us.
