Dear all,
I am not a great cook; but I learnt cooking out of lots of passion. And here I would like to share with you some of the recipies of sweets that I make.

Sweets are generally made either of Sugar or of Jaggery. Some of the recipies that I post here are time tested; some of them are my mother's recipies, which she have arrived at after lots of trials and errors.

I am happy to share it here with all of you.

This is one sweet, which is a favourite of our entire family. I am giving you both traditional and microwave method to make this mysore pak or mysore pa.

Ingredients:
Gram Flour - 1 Cup
Ghee - 2 Cups
Sugar - 3 Cups (If you dont like to have more sugar you can reduce it to 2.5 cups)

Method:
Heat 1 Cup of ghee and add the gramflour into it and make it a fine paste.

In a hard bottom pan, pour the water and add sugar to it and bring it to boil. The sugar syrup should come to one string consistency. Then add the gram flour mixture into it and keep mixing it untill all mixes well. Keep adding the remaining ghee. The entire mixture will come to a boil and will bubble up. When the mixture comes to honeycomb texture and when it does not stick to the sides of the vessel, remove it from the fire and pour it in a plate smeared with ghee. When it hardens up you can cut it into pieces.

Ingredients:
Gram Flour - 1 cup
Ghee ( melted) - ¾ cup
Sugar - 2 cups
Water - ½ cup

Method:

Always use a big shallow microwave bowl/basin. This will help to avoid overflowing of the mixture while cooking.

Melt ghee in the bowl for 1/2 min and add that to the gramflour and make a fine paste.

Mix sugar & water in the microwave bowl and microwave it in high for 2 mins.

Remove and mix it again throughly and stir nicely to dissolve the sugar throughly.

If the sugar is not dissolved then microwave it for another 30 seconds to 1 minute.

Now add the gramflour-ghee mixture and mix it throughly. This need to be microwaved in high for another 2 mins.

After 2 mins, remove and stir. Repeat the same process for another time (if the mixture is still sticky, repeat the entire process again. The whole procedue will take 4 to 6 mins depending on the oven.

Check for the honey comb texture. When the mixture reaches that texture remove and pour it into a plate smeared with ghee.

Ingredients:
Butter - 200 gms
Milk powder - 2 ½ cups
Cocoa - 50 gms
Sugar - ½ kg

Method:
Sieve milk powder & cocoa ogether.

Add 2 cups of water to sugar and boil it in a hard bottom pan and bring it to one string consistency.

Remove from fire and add butter to it and stir it well till the butter melts and blends.

Then add milk powder-cocoa mixture. Beat it thouroughly with a woodden spoon untill the powders blend well with the sugar syrup.

Pour in a tray smeared with ghee.

Let it cool and cut into pieces.

Ingredients:
Coconut grated fine - 1 cup (Take the white alone)
Sugar - 1 ½ cups
Cardamom powder - 1 tsp
Ghee - 2 tbsp
Cashew Nuts - Finely chopped and fried in 1 Tbsp of Ghee

Method:
Add Sugar to one cup of water in a hard bottom vessel. When it have dissolved completely and boils add 1 tbsp of milk and allow it to boil for another min which will make the impurities float on the top. Strain the syrup in a cloth filter and remove the impurites. Wash the hard bottom vessel thouroughly and pour the syrup again into it.

Boil the syrup and bring it to two-sting consistency. Lower the flame and add the coconut to it. When the mixture forms a porus lump and crystalises, add the cardomom powder and the fried cashewnut. Add the remaining 1 Tbsp ghee and mix it thouroughly.

Remove from fire and pour it in a ghee greased plate and let it settle. Once cooled cut it into pieces.

Ingredients:

Grated coconut 1cup
Gram Flour - 1 cup
sugar 3 cup
Ghee 1 cup
Milk 1 cup

Boil milk and dissolve sugar into it. When warm, add grated coconut, gramflour and mix it thouroughly without any lumps. Keep on fire and cook the mixtue. Add the ghee to it little by little. When the mixture forms a dough, remove from fire and pour it in a greased plate.

Let it cool and cut into pieces.

7 cup cake sounds yummy although loaded. Holiday season is for eating heavy,buttery,cheesy food. I will definately give it a try.

Rajmi, My aunt used to make coconut burfi and I loved it so much.
I tried your recipe and it tastes no different than my aunts coocnut burfi. Thanks a lot for posting this recipe

That is the recipe which my mom gave me. I am happy that you made it and you loved it. Though I dont make this that often, still whenever I make it, it is a great hit.

Have to count on calories too.

When we were young, my mom used to make this and carrot halwa quite often. Just for the sake of making us eat these two vegetables. It is quite healthy too. You can alter the ghee and sugar quantities that I have given below if you are a diabetic and health conscious.

Ingredients:

Beetroot - 1 kg
Milk - 1½ litre
Sugar - 400 to 500 gm
Cardamom powder - 1 teaspoon
Saffron - few twigs (optional)
Ghee or Butter - 1 Tablespoon
Cashewnuts - finely chopped and fried in ghee.

Method:

Peel and grate beetroot.

Boil milk and let it cool.

In a hard bottom deep saucepan add the milk and beetroot.

Let the mixture boil untill the milk thickens.

Stir the mixture continuously so that it doesnot stick to the bottom.

Once it is thick, add sugar and cook further till the paste becomes more thick.

Now add ghee, cardamom, and saffron.

Low the heat and stir constantly till the mixture collects into a soft ball and the ghee oozes out.

Serve hot, decorated with cashewnuts.

Its Halwa Mukti. And kids those who dont eat beetroot, will definitely love this. Will you beleive, we had even had beetroot halwa with curd rice. :D

Oh ho, you should have read it made any one and then had it with your lunch. Ok next time make sure you make something and give me your feedback. Infact feedbacks make me post more. Feed backs after trying it out.

Rajmi, thanks for great recipe. Your beetroot halwa became very famous among my friends. We had one family over for dinner this weekend and they liked it.
beleive me Rajmi, I gave credits to you for the recipe and also gave your recipe of tomato juce to them.
