MUSHROOM FILLING FOR SANDWICHES

Ingredients:

1 packet of button mushrooms,cleaned and chopped ( about 200-250 grams)
1 tbsp olive oil
2-3 stalks of spring onions, chopped finely
1/2 tsp chopped garlic
1/2 tsp chopped green chillies
Salt and Pepper to taste
1 tbsp chopped coriander leaves
1/2 cup grated cheese
Butter as needed

Method:

Wash and gently wipe the mushrooms and chop them finely.
Heat oil in a non stick fry pan, add onion, saute for a minute and add garlic and green chillies. Saute till very soft.
Add chopped mushrooms, salt and pepper to pan and mix well. Cover and cook till mushrooms are done and then dry the moisture. Mix in chopped coriander leaves and remove from fire.
Arrange the filling on the buttered bread slice and garnish with grated cheese. Cover that with another buttered slice and toast the sandwich.
Cut them into 4 triangular pieces and serve hot with Tomato sauce or ketchup.

Note:

If you are planning to give this to kids as school tiffin, cut out green chillies and just add pepper powder. That will be enough.

Nice one, will definitely give it a try. Can I suppliment the mushrooms with something else like Tofu, or sweet corn?

MARINATED PANEER

This is a very simple recipe, no need of cooking at all. You can have it ready for the guests and also for kids when they come from school looking for some new snack. You just have to give it more than 10 hours for the paneer to become soft with infused flavours.

Ingredients:

1 packet of paneer, cut into small pieces ( about 200 - 250 grams )
4 tsps Sugar
1-2 tbsps Water
4 tsps chat masala
2 pinch Black salt
2 pinches Dhania powder ( optional )
1/2 tsp Amchur ( Dry Mango Powder )
Chilli powder to taste
1 tbsp lemon juice
1 tbsp chopped coriander leaves

Method:

Cut the paneer into small flat pieces, you can cut into bigger slices too, if you like.
Mix sugar and water together till the sugar melts completely. You can use warm water if necessary.
Mix in all the ingredients except the coriander leaves. Check for the taste. Mix in the paneer pieces and refrigerate overnight if you like or at least 8-10 hours.
In between , take it out and mix well so that the marinade mixes well with the paneer.
Just before serving garnish with coriander leaves. Can serve with tooth picks as an appetizer or as a snack between meals.

Note:

Paneer is very healthy food, rich in Calcium and proteins. Very good for children too.

Yes you can supplement with any vegetable also. Boiled Channa and Rajma can also be used instead of mushrooms.

Dear Ritana,
Paneer can be eaten raw. No problem but if you keep it in the refrigerator after marinating the paneer will get infused with all the flavours.
That's why It has been told in the record to seep in the marinade fpr at least 8-10 hours.

I followed your sandwich recipe and added carrots,capsicum, and corns , It was yummy and does not take much time to make it.
I was sceptical about panner recipe but I was wrong, it tastes good with all the marination.

I tried Nurani's paneer recipe, it turned out to be a hit in the family and the kids loved it so much. For the calorie consious people, I prepared it with Tofu, they too loved it. I marianated Tofu for around 15 hours.

I forgot to take the photos, but will take one when I make it next time may be this Sunday.
