In India we can find cuisine different from region to region. Here I would like to start with Kerala Recipes
I am starting with Palada Prathaman which is one of Kerala's famous recipes.
PALADA PRATHAMAN
Ingredients:
1 Palada packet about 200 grams )
3 litres of milk
1/2 litre water
2-3 green cardamoms
750 grams sugar
1-2 tsps ghee
Method:
First wash the ready made ada in ordinary water twice to clean the dust if any and drain out the water, Boil 1 litre water and soak the ada in that for at least half an hour. Then strain out, wash in cold water, strain and keep aside.
Meanwhile boil 3 litres of milk with half a litre water in a thick bottomed pan ( Pressure cooker can also be used ).
When the milk starts boiling, simmer and add the ada slowly stirring all the time till it starts boiling again.
Keep stirring every now and then keeping an eye that the milk does not stick at the bottom and also that it does not boil over.
As soon as the ada gets cooked and is very soft to the touch add the sugar stirring all the time.
Keep stirring every now and then till the milk gets thicker and the colour changes to slightly pinkish. Put in the green cardamoms on the whole ( so that you can remove later when you serve ) and add the ghee.
There is nothing else you have to do. Let it cool a bit. You can either serve this hot or cold. Both will be relished by your guests.
Note:
This is a very time taking recipe, if you have little time with you you can use condensed milk and make but the taste will not be the same.
It took about four hours for me to finish this recipe. In the olden days our mothers and grand mothers used to make ada too but nowadays it is available in most of the shops selling Kerala things.
