Can anybody suggest some quick diabetic recipes?

Try this Karela sabji
Ingredients:
karela-4 medium sized tender karelas. tender and fresh
Besan 4 tbsp.
onion - 1 medium chopped,
garlic- 3 flakes chopped finely,
ginger - 1/2" finely chopped,
chilli green - 2-3 finely chopped,
tomatoes -2 medium sized sliced,
dry spices:amchur powder - 1 tbsp
chilli powder - 1/2 tsp(more if u like it spicy,
coriander powder - 1 tbsp,
cumin seeds(jeera)- 1/2 tsp,
salt to taste,
oil for frying - 2 tbsp,
coriander leaves - 2 tbsp finely chopped (for garnishing)
Method:
First peel the karelas and wash them in hot water then cut the karelas into thin circles. Let little moisture remain and then put them in a bowl sprinkle a little salt and keep it aside for 30 minutes. Roast besan on a low heat for 10 minutes. Take oil in a kadai and add cumin seeds. Once it splutters add the onion, garlic, green chillies and ginger.
Fry till brown. Add all the dry spices . Cook for sometime and then add the karela to it which are squeezed for removing bitterness and fry for sometimes, add roasted besan, stir till the masala get mixed.
Taste for salt as you had already sprinkled some salt while cooking it Add the sliced tomatoes and let it cook for sometimes. Cover and cook until tender.
Add the coriander leaves and serve with chappatis or rice and dal.
Initially to get used to the taste squeeze karela to remove all bitterness but as you get used to the taste you do not have to remove the bitterness.

Diabetic Chaat
1/2 cup sprouted moong
1/2 cup chana sprouts
1 tomato chopped
1 onion chopped
1 tsp. coriander leaves finely chopped
1 green chilli finely chopped
1/2 tsp. ginger grated
salt to taste
lemon juice to taste
Method:
Boil sprouts in salt water till soft but not soggy. Drain and chill well.
Add all ingredients, and toss well. Add a few pinches chaat masala if desired.

Thank you Shalaka for karela recipe. I tried it n it came out really good. I didnt know karelas can be so tasty.

Try this spicy healthy moong sprout salad
2 cups green moong sprouts,4 tomatoes chopped,3 green chillies chopped,2 cucumbers chopped, A bulb of garlic chopped.1 juice of lime ,A bunch of coriander leaves finely chopped, Salt to taste
METHOD
Sprout the mong at home or you can buy sprouts from outisde. Steam the green moong sprouts completely. Strain it and put it in the bowl. Add tomatoes, green chillies, garlic and cucumber. Squeeze lime over it. Add salt. Now toss it. Garnishit with chopped coriander leaves. You can toast garlic if you dont like it row. Sprouts are extremely good for skin and hair. Tomatoes have vitamin A and C.

Healthy Salad
Ingredients:
Fried ground nut 1/2 cup (crush it) (you can use fresh groundnuts which can be half boiled or fresh Channa)
Moong Dal (Green) - Sprouted - 1 Cup
Big Onion - 1 Finely Chopped
Ripe Tomato - Finely Chopped (you can make it to a fine puree also)
Green Chilly for seasoning
Grated ginger 1/2 sp
Lemon juice 1 sp
Salt
Mustard - 1/2 sp
Oil - 1 Sp
Method:
Mix groundnut, moong dal, onion, tomato, salt and green chilly well. In a frying pan put oil and add mustard seeds. When it splutters pour it on the mixture. Mix well again and add the lemon juice to it.
In a big bowl put all the ingredients and mix well.
Serve with coffee or tea.

Green Peas - Corn Soup
Ingredients:
Green Peas - 2 Cup,
Corn - 1 Cup,
Onion - 1, (finely chopped)
Garlic - 1 Pod,
Oil - 1 Tspn,
Salt - For Taste,
Fat Free Milk - 1/4 Cup
For garnishing - Coriander, Mint leaves cut into small pieces (each 1 tspn)
Method:
Fry the onion in oil and keep aside. Add all the other (except milk, mint and coriander leaves) ingredients to cups of water and cook them in medium flame (it will take 10 to 15 mins). When cold grind all the ingredients along with onion.
Add milk, coriander, mint and salt and boil it nicely before serving.

Ingredients:
Barley - 1 Tbspn
Finely chopped Onion - 1 Tbspn
Finely chopped Tomato - 1 Tbspn
Finely chopped Cabbage - 1 Tbspn
Finely chopped Beans - 1 Tbspn
Finely chopped Carrot - 1 Tbspn
Butter - 1 Tspn
Pepper Powder - 1/4 Tspn
Cinamon - 1 small piece
Clove - 2 nos
Elaichi - 1 No.
Method: Cook all the vegetables (except Onion). Mash them thoroughly and drain it (you can even grind it in a mixie). When cooking the vegetables, add the clove, elaichi and cinamon to it. Cook barley separately and add it to the vegetables and grind it into a fine paste.
In a kadai, add the butter, add onion to it. Fry it till it becomes tender. Then add the drained vegetable water to it and bring it to boil. Add salt and boil for another 1/2 min. Add the barley paste and boil.
Add pepper powder before serving.

Yes, ginger added to any salad or home made soups will give you great taste.
I normally dont add ginger as husband doesnot like the taste of it, but when I am making salads or soups, I make sure I add it to enhance the taste.

rajmi has started a very important thread.my hubby is also a patient for diabetes.but he is so fond of sweets and i have to make them.so,now in market,we have substitutes for sugar.SUGARFREE,EQUAL,ZERO,AND MANY MORE.
you can make rabdi,without sugar and add sugarfree powder when it comes to normal temperature.
fruit custard,and halwa can also be made by using sugarfree powder.
add soyabeen to wheet flour,in 10:1 proportion.this also improves digestion and helps to lower down blood sugar.

very helpful recipes an tips sakhis. It gets difficult sometimes to cook variety of diabetic recipes. All your recipes will help me.

Hi rajmiarun,
Thanks for sharing these diabetic recipe with everyone. These recipes will be of great help for my mom who is type II diabetic. I like green peas corn soup recipe most and will start from this. Will share my reviews later after trying this corn soup.
