Soups are always every one's favourite. You can have it as a starter or as a full meal, depending upon the ingredients used. Soups can be hot or cold, thin or thick. A hot thick soup makes a great meal in winter and the cold soup is a great appetizer in the hot weather.

Let us share here the different soup recipes.

Ingredients:
Cabbage - 1/2 cup
Cauliflower - 1/2 cup
Carrot - 1/2 cup
Potato - 1/2 cup
Beans - 1/2 cup
Tomato - 1/2 cup
all the above vegetable cut into small cubes.

Drumstick leaves - 1/4 cup
Onion - 2, chopped finely
Green Chilly - 1 Small
Cooked moong dhal - 1 tbsp (optional)
Ghee - 2 tsp
Bay leaf - 1 piece
Saunf - ½ tsp
Pepper Powder - 1/2 tspn
Milk - ½ cup
Salt - To taste

Add water to moong dhall and get dhall water from it.
In a pressure pan, heat ghee, temper bay leaf & saunf.
When they splutter, add onion & fry till they change colour. Now add the green chilly and fry for another minute.
Add vegetable, dhall water & salt.
Cook well and allow for one or two whistles.
Cool, open & serve with milk.

This is a thick soup and it makes a real filling meal on any cold or rainy day.

Ingredients:
Tomato juice (taken out of fresh ripe tomatoes) - 4 Cups
Corn Flour - 2 tspns
Cumin Seed (Roast and Ground it) - 2 tspns
Ginger garlic paste - 1 teaspoon (you can also add sliced ginger and garlic if you dont like the strong flavour of the paste)
Milk - 1 tbspn
Salt and Pepper - For taste

Method:
In a hard bottom pan add all the ingredients (except milk) and bring it to boil in a medium flame. Allow it to cook for almost 5 mins. Add milk and boil for another 2 mins.

Serve hot with soup stick and courtons.

Ingredients:
Ripe Tomatoes - 4
Choped garlic - 1 tsp
Chopped onions - 1 tbsp
Chopped capsicum - 2 tbsp ((optional, but preferable)
Carrot or beetroot - 1 tbsp chopped (optional)
Jeera - 1 tsp
Butter - 1 tbsp
Salt & Fresh pepper powder

Method:
Heat butter & add jeera when the former melts.
Then add garlic and onions fry for some time. Then add the capsicum and beetroot. When they are cooked a little, add the chopped tomatoes and fry well. Add 2 cups of water & cook for a whistle or two in a pressure cooker.

Add another 1/2 cup of water and mash well. Strain through a cloth strainer. Add salt and pepper. (You can add a little sugar to taste)

Serve hot with soup sticks and courtons.

Hi!


Check this out!

4 - Ripe Tomatoes cubed
1 - Onion sliced
2 - garlic
1 tsp - Black pepper Powder
1 cup - Milk
1/2 cup - Cream (Opt)
Salt to taste
1 - tbsp. Butter
1 pinch Garam masala powder

Melt Butter in a pan, add onion and tomato and garlic, saute till soft.
When cool, blend well in a blender.
Pour into saucepan, cook for 5 mts, covered.
Now add milk, garam masala, pepper powder.
Cook stirring continuosly,put stove off, add salt. Serve hot with cream on top and Croutons!

Hi!

This is easy-to-make soup, specially if u have the canned corn!


Corn Soup

1 can -Corn
1 cup - Hot water
1 tsp.- Black Pepper Powder
1 tsp. - Soya Sauce (Light)
1 tsp.- Vinegar
Salt to taste


Mix all ingredients over stove, allow to boil, put stove off.....and thats it!
garnish with Dhania if desired!

Broccoli Cheddar Soup
Ingredients
1/4 cup butter
1 onion, chopped
2 teaspoons garlic powder or 1 clove garlic crushed
1/2 teaspoon ground white pepper or black pepper
1 (16 ounce) package frozen chopped broccoli
1 quart chicken broth or vegetable broth
1/2 cup all-purpose flour
1 1/2 cups whole or 2% milk
Salt to taste
8 ounces shredded Cheddar cheese

Method
Melt butter over medium heat in a pot. Cook onion in butter until softened. Add garlic and pepper; cook for 1 minute then stir in broccoli, and stir in chicken broth or vegetable broth. Bring to a boil and simmer until broccoli is tender, 10 to 15 minutes.
Meanwhile whisk flour into milk until dissolved. Stir into soup stirring frequently until thickened. Reduce heat, and stir in cheese until melted and heated through.
Season with salt to taste.

This is Oats Soup:
When I was served this soup, I was thinking how this is going to taste as there were the red and yellow varities of capsicum added in it. I am not a great fan of capsicum; so was not so ready to take this. But when I tasted it, I felt happy that I didnot deny it. It was so yummy. It is a filling soup too.

Ingredients:
Oats - 1 cup
Finely chopped pieces of red, yellow and green capsicum - 1 cup
Butter - 2 tspn
Cinnamon - 1 piece
Bay leaf - 1
Milk - 2 cups
Fresh cream - 1/2 cup (optional)
Garlic flakes- 3 to 5
Salt - To taste

Method:
Soak Oats in boiling water for 15 to 20 mins till it becomes soft and a little fluffy. Using a masher or hand blender, blend it thoroughly. Mix 1 cup of water to the milk and add the oats to it. Bring it to boil.

In a hard bottomed pan melt the butter and add the garlic flakes (smash the garlic little). Add cinnamon and bayleaf to it. Mix well and add the capsicum and salt. Let this cook well. Add the cooked oats to this and serve hot.

You can add pepper powder and fresh cream just before serving.

Instead of just capsicum, you can use the Vegetable stock also. If you are using vegetable stock, use the soup bag instead of cinnmon and bayleaf.

Rajmi, I heard of oast soup for the first time. Will give it a try. Tulsi likes your brocolli cheddar soup. I do it with little variation. I avoid cheese. I add small peice of potato and carrot.

Spinach (palak Soup)

Ingredients:
1 and 1/2 cups palak(spinach)
½ carrot
1/2 cup onion (cut into small pieces)
1 tsp corn flour or maida
2 tsp butter
Pepper powder
1/2 cup milk(optional)
Salt to taste

Method:
Heat 1 tsp butter. When it melts, add carrots and after 5 minutes add spinach and fry for 1-2 minutes. Add 1 cup water and cook till spinach leaves become tender. Grind carrots and spinach into a smooth puree using mixer/blender.
Heat remaining butter and fry onions till they turn translucent. Now add spinach puree. Mix corn flour in milk or water and add this to the spinach mixture stirring continuously. Add salt and pepper. When it thickens to desired consistency, take off from heat.
Serve hot.
