30 minutes Veg Thali

Menu
Rice, Dal, Eggplant fry, pickle, papad

Put rice and moong dal in pressure cooker. Add salt and turmeric to dal. (5 minutes)
Wash and cut eggplant into 1 inch thick slices, apply salt, turmeric, coriander powder, little bit of tamrind and keep at the sides. (5 minutes)
Take 2 spoons of oil in a pan, warm it up.
Add mustard seeds, cumin, green chilies, curry leaves, keep tadka ready.
Keep Frying pan on low flame
BY this time your rice and dal will be ready in pressure cooker. Put off the flame and let it cool before you open it.
Take bread crumbs or Rawa
Add oil in the frying pan. Fry papad in frying pan and then roll eggplant in rawa or bread crumbs and put it on pan. Add some oil and let it cook on medium heat for about 3 minutes. (5 minutes)
Open the cooker, add dal to the tadka and let it boil on low flame. (5 minutes)
Turn the eggplant and let it cook for another 3 minutes.
Spend rest of you time in serving big quick meal.
If I have shorter menu, I always serve all the chutneys, pickle, papad.

OMG! All this cooked in just 30 mins....Nidhi you work so fast in your kitchen.
Food looks very nice....hoping I can also cook all this in 30 mins.

Nidhi, I liked your idea of serving banana, pickle and papa which makes thali looks full.

Ketaki, I always add papad, pickles, raita if my menu is not big just to make it look tempting.
