In general, pachadis, salads, raithas and kootus (with less coconut) form low fat foods.

Friends, let us share the different varities of all the above here so that we can learn new types.

This is my all time summer fav salad
WATERMELON SALAD
Ingredients:
6 cups watermelon; cubed, seeded, peeled
1/2 small red onion; cut in thin half moon slices
1/3 cup apple cider vinegar
2-3 tablespoons mint leaves; chopped
1/2 teaspoon freshly ground pepper

Chill melon before preparing, especially if it is very ripe. Combine all ingredients gently.

You can have it anytime of the day. It si very cooling food during summer

Low fat vegetable soup
1 tsp olive oil
2 cloves garlic, minced
1 small onion, diced
2 stalks celery, chopped
2 medium leeks,
2 medium carrots, halved lengthwise, then sliced
1 medium zucchini, halved lengthwise, then sliced
1 cup frozen peas
1 tsp oregano optional
1 tsp dried basil or fresh chopped tulsi leaves
1 tsp dried thyme optional
6 cups vegetabe broth or water
2 cups fresh baby spinach
1/4 cup fresh parsley, chopped
you can add as many vegetables you can like corns, cabbage, beans etc. Everyday try different veggies so you dont get bored.

Preparation:
Heat oil in a pan on medium heat. Sauté garlic, onions, celery, leeks and carrots until softened, about 6-7 minutes. Add zucchini and sauté for another 2-3 minutes. Add peas, sprinkle dried herbs, and stir for 1 minute. Add broth. Bring to boil, then cover and simmer for 10 minutes. Add spinach and fresh parsley; stir and simmer for 2 minutes. Season with a little Kosher salt and black pepper to taste.

All veggies in one bowl. Very health soup. Will try this. Thanks for posting this recipe (me looking for low fat recipes)

Tulsi wonderful low fat recipe of soup.
Tip: Add herbs to the soup towards the end to keep the herbal smell fresh.
