Hey Gals!

This has been an all-time fav. of mine, when mum made it!
Being away from India, its hard to find fresh fish, so have to do with the frozen and tinned kind:(!

This recipe still tastes great, frozen, canned or fresh!
Simple and easy too!

8 - Sardines, cut into 2 or if its small, keep it as is
2 - tbsps. Ground Black pepper
2 - Large onions thinly sliced
1 - tbsp. sliced garlic
1 - tbsp. Sliced Ginger
8 to 10 - green chillies slit lengthwise
A few sprigs of curry leaves
Salt to taste, and oil for shallow frying.

Mark the fish with a knife, so that it can absorb the masala.
Mix together Pepper and salt and rub it in.

Shallow fry the fish (both sides), and leave aside.

In the same pan, same oil, put in curry leaves, onions, and saute, till onion is translucent, then add ginger, garlic and green chillies, and salt to taste, fry well, but do not brown it too much. Now add the fried sardines. Put the sardines in the middle of the pan, fry turning both sides, leaving the other onion masala at the sides of the pan. Now heap the onion masala onto the sardines.......put on low fire, cover and leave for 5 mts. Put the stove off. Enjoy!
