View Full Version : Sri-Lankan Brinjal Fry! (Pickle)

Hey Gals!

Here's an all time Fav. Brinjal (Egg-Plant) dish of mine!


2 cups - Brinjals, sliced into 1" pieces
2 cups - Sliced onions
8 to 10 - Slit Green chillies
2 tsp. - sliced Garlic
2 tsp. - Sliced Ginger
1 tsp. Crushed Mustard seeds
2 tbsps. - Vinegar
Salt to taste
Oil for frying

Deep fry separately Brinjal, Onions(till brown, not too brown though).

In a pan, pour a tbsp. of the same oil, saute, crushed mustard, ginger, garlic, green chillies, add fried brinjal and onions, mix well over fire, now put stove off, add the vinegar and salt to taste. Can be stored for days.

Hi Ankie,
Thats a great recipe yaar. I love brinjals. Will definitely try it out. I think I have a few brinjals in my fridge. But pls tell me is Vinegar definitely to be used or can I leave it off.

Hi Rajmi!

Vinegar gives the dish a slight tartness...and compliments the dish, and helps to preserve.....but I guess u could leave it out or reduce the quantity to suit ur palate!
