Hi Gals!

Luv Comfort food, specially in winter!
This is one among them! And I make it with an Indian twist!

Mac 'n Cheese

2 cups - 3/4 cooked Macaroni
2 cups of Milk
1 tbsp. - Maida
2 - Garlic Cloves minced
1 cup - Grated Cheese, I prefer Cheddar for its sharpness.
However if u r not a Cheese fan, try Mozarella, its very subtle.
Salt to taste
1/4 tsp - Paprika
1/2 tsp. - Black pepper powder
2 tbsps. - Butter
Dry basil leaf, if u have any.

Melt Butter over a stove in a saucepan.
Add garlic, saute till u get the aroma.
Now add maida, fry well, till the raw smell disappears
Add milk, little by little, keep stirring so that no lumps form.
Keep stirring (over low fire), till it starts thickening.
Now add pepper, basil, paprika, salt to taste....and now add the cheese, allow to blend well. Put stove off.

In the meantime, put Macaroni in a bakeware.....pre-heat oven to 350 degrees. Pour the White sauce over the macaroni, put to bake for 20 mts.
Put oven off after 20 mts. and now sprinkle some cheese on the top, grill for 1 mts. for the golden brown look! Allow to sit for 10 mts. before u dig in!

I should keep myself away from food section. Minute I read any recipe, I want to have it.
