Hi!
This is an all-time favorite of many and the queen of Puddings!
Also known as Cream-Brulee! This is my version and my recipe I concoted over the last few years, and perfected it....so as to beat the couchy taste of eggs!
Caramel Custard
2 cups - Milk
2 - eggs
1 Cup - Sugar
1 tsp. - Vanilla Essence
1 - tbsp. - Sugar for Caramelising
Pre-heat the oven on 350 degrees.
Boil and simmer 1 and 1/2 cups of milk in a sauce pan. Put stove off.
Beat 2 eggs and sugar, now add 1/2 cup milk to this. Mix well till well blend.
Now add Vanilla essence to this, mix well. Now add this slowly to the boiled cooled milk, mix well, leave aside. Keep a bakeware ready. Now caramelise 1 tbsp. of sugar till brown, immediately pour it into the bakeware. Let it sit and harden. Then pour the milk+egg mixture. Take a metal tray, add some water to it (this is called the hot water bath - used for baking puddings). Put the Bakeware on this tray, put into pre-heated oven, bake for 45 mts or an hour.(Baking time varies oven to oven). To test whether its cooked, use a tooth pick, poke in the middle, and if the tooth pick comes clean its cooked! Once its our of the oven. Cool and then put into fridge. Just before serving. Take it out. Pass a thin knife around the dish, put a plate on top, very carefully turn it upside down.....and there u have the Caramel Pudding with the caramel running all over the plate!
