Hi!
This Veggie Stew is eaten with Appam, which is made with white rice!
This combination of Appam+Stew is dynamite! Check out the recipe for Appam! If you do not want to try this with Appam, it goes well with Fresh White Bread too! And is even a good combo with Pulao! Try it!
Kerala Vegetable Stew
1 - Potato cubed
1 - Carrot, cut length wise (abt. an inch)
6 - Green beans, cut length wise as carrot
1/2 cup - Fresh Green peas
1 - Onion cubed
5/6 - Green chillies, slit
A few Curry leaves
Couple of pcs. Cinnamon (Whole)
1 - tsp. -Whole Black Pepper
2 cups - Coconut Milk
oil
salt to taste
In a pan pour a tbsp. of oil. Put whole pepper and cinnamon. Put in the cubed onions and green chillies, saute till onion is translucent. Now all veggies, except potato and peas(these take less time to cook, so u add them later on). Saute well. Now take 1/2 cup coconut milk add 1/2 cup water to it and pour into pan, close and cook till veggies are half done, now add potatoes and green peas. Remaining coconut milk, cook on medium fire till all the veggies are cooked, making sure it does'nt all mash up. Put fresh curry leaves on the top. Close, put off stove. Allow to stand for 20 mts. before u dig in!
