Eggless Banana Walnut Cake

Ingredients:
1 cup all-purpose flour
1/2 cup - walnuts, chopped
1 banana mashed smoothly, peel off the skin
1/4 cup - sugar
4 tablespoons - oil or butter
1 tsp each, - baking powder and vanilla extract
Milk (I add milk in place of water)

Method:

1. In a big bowl, mix the wet ingredients - mashed banana, oil/butter and vanilla extract. Whisk very nicely to mix all the ingredients very well.
2. Then slowly add the flour, sugar, walnuts and baking powder. Combine thoroughly. If the batter looks tight, then add about quarter cup of water or milk and mix again.3.
3. You can also mix dry ingredients together and then add to wet ingredients.
4. Preheat the oven to 350 F.
5. Prepare the cake pan, by applying butter on the bottom and to the sides.
6. Pour the cake batter. Spread evenly. Bake at 350° F for about 30 to 45 minutes.
7. Check if cake is done by inserting toothpick, it should come out clean.
8. Cool and then cut the cake.
9. For shiny finish, you can brush baked cake with butter or milk when it is hot.

Manda, your cake looks yummy and tasty. It is always challenging to bake veg cakes but you have done great job!!!

I think I will put on weight if I look or read nay more about food. Just came back reading sunkans recipe and mouth is watering and now this cake. yum yum yum

Hi Patelmandas,

tried your Egg less Walnut banana cake today evening. it came out very well. I added 2 eggs in banana puree and followed all the steps as you instructed.
Thanks for sharing such a easy, simple and delicious cake.
