You can put lucky bamboo in water or in soil.
1. I have kept it in water and I change the water every week to avoid rotting of plant.
2. Avoid direct sunlight but it needs some sunlight. Make sure you keep them out in the sun once a week. Avoid afternoon sun.
3. Use pebbles to support the plant. Clean pebbles and jar when you change the water.

You can plant bamboo plant in a soil in a pot. Make sure you have lot of drainage at the bottom of the pot. You can put pebbles, stone and sand at the bottom of the pot.
Make sure surface of the pot is dry before you water it. Keep in light shade and little exposure to sunlight.

I too got the lucky bamboo plant as a gift. I changed the water every week and also placed the pebbles for support. Inspite of it, the plant started changing colour. Guess it was due to the temperature change indoors (due to change in weather we switch on the AC/heater). It did get some sun (not directly).
Any suggestions to take care of it in a better way?

Water should be clear and clean.
Change water every week which you do.
Let the tap water stand in a separate container for 24 hours before using it for bamboo plant. This way Chlorine and flouride in water will dissipate.
Try this and let me know.

dear raeshwari,
i ahve kept my lucky bamboo plant in a round 'matka'shaped glass jar.put some pebbles in it.this is kept in my showcase under spot light which is switched on daily for atleast one hour.the plant is kept in north east direction according to vastu.the roots also are in contact of light.i do not keep in sunlight since the light from the yellow spot light is enough fo its wellbeing.
and,i hace been maintainig this plant from 2 years.yes,i occasionally change the water .it is always tap water.i add a pinch of salt every week.the plant is evergreen.try these tips.they may work for your lucky plant too.

Thanks sakhis for useful tips. When I went for vacation, my bamboo plant breathed its last.
With all this tips, I am tempted to get a new bamboo plant.
