Todays Women has to be multi tasker. She plays the role of wife, mother, daughter, sister and also takes care of her career.At the end of long day she finds time to cook hot meal for the family. It gets very hectic to cook and then clean the mess in the kitchen.Let us contribute one pot meal where only one pot is used for cooking. you can use pots of soaking,cleaning vegetables. The complete meal (dinner/lunch) should need one pot

This is my favorite one pot healthy meal. It has all the ingredients of healthy meal: Rice,dal and all the veggies. You can add vegetables of your choice.
Gujarati Khichdi (Serves 4)
Ingredients:
Rice – 1 cup
Moong dal – ½ cup
Oil
Cinnamon sticks – 1 to 2
Mustard – ½ tsp
Jeera – ½ tsp
Onions chopped – 1
Asafoetida – a pinch
Vegetables – potato, peas, carrots, eggplant (optional), black eyed peas (frozen or boiled), frozen tuvar dana
5 Green chilies – crushed
Garlic paste – 1 tsp
Ginger paste – 1 tsp
Raw peanuts – ¼ cup (optional)
Cilantro chopped
Garam Masala – 1 tsp
Method: Add about 1 tsp oil in a kadhai or a heavy bottom vessel. Add mustard seeds. After the mustard seeds pop add cinnamon and jeera followed by the onions and sauté for a few minutes. Add the asafoetida. Now add all the vegetables and sauté for a few more minutes. Add the crushed green chilies, the garlic paste and the ginger paste and sauté for 3 more minutes. Now add the washed rice and dal.You can also add the peanuts at this time. Add about 3-4 cups water. (depending on how you like the khichdi consistency to be). Add some chopped cilantro and some garam masala. Cover the vessel with a tight lid and leave to cook for about half hour till the rice and dal are done to a nice mashed mix.You could also make this in a pressure cooker or a rice cooker. Serve hot with a dollop of ghee, some kadhi or yougurt, papad and pickle.

Veggie Pulao
Ingredients
1 cup - Basmati rice, wash and drain
3/4 cup - Fresh peas
1/4 cup - Carrots, chopped to small pieces
1/4 cup - Beans, chopped to small pieces
1 small stick - Cinnamon
4 - Cloves
1 - Black cardamom
2 - Bay leaves
1 tsp - Ginger paste
1 tsp - Garlic paste
1 medium - Onion, sliced
1 tsp - Cumin seeds
2 cups - Water
Salt to taste
Method
Heat ghee or oil in a deep pan. Add cinnamon, cloves, cardamom, bay leaves, cumin seeds and fry for few seconds. Add garlic - ginger paste, then add onion and fry till onion is lightly browned. Add mixed vegetables and fry for 2-3 minutes. Add rice and fry for a minute. Meanwhile, bring water to a boil. Pour this water slowly into the rice pan. Lower the heat to low when pouring the water. Stir in, add salt to taste. Close with a heavy lid and bring to a boil on medium heat. Once it come to a boil, lower the heat and cook till all the water is used up. garnish with chopped cilantro. you can also add leftover chicken to this recipe.

Me the first time seeing this topic here. Very nice topic and thank'S to RUTUP84 for starting this topic.
Sakhi's try this "TOMATO RICE"
Tomatoes- 500gms
Rice- 3 cups (rice cooker cup)
Red chillies- 10
Garlic- 8 flakes
Onions sliced- 1/2 cup
Curry leaves- few
Coriander leaves- 1/4th cup chopped
Mint leaves 1/4th cup
Fresh coconut 1/4th cup (grated)
Sajeera 1tsp
Cloves 6
Cardamom 4
Cinnamon 3 small pcs
Oil 2 tbsp
Ghee 2 tbsp
* Wash the rice and soak for 15mins in water.
* Grind red chillies and garlic into coarse paste.
* Dice tomatoes and add cup water and boil for 10-15mins.
* Let it cool down and put in a blender to make puree and strain the puree.
* Add water and keep aside.
NOTE: If u get 3 cups of tomato puree, add 3 cups of water. If the puree is less than 3cups add water. Total cups of tomato water should be 6cups.(For one cup rice, add 2 cups of water i.e 1:2)
* Heat oil and ghee together.Fry sajeera, whole garam masala, onions,curry leaves, red chillies and garlic paste and coconut.
* Add measured tomato water and salt to taste. Bring the water to boil.
* In rice cooker, add rice and boiled water and mint leaves. Give a stir, check the salt and cover with lid and allow it to cook. For every 5mins give a stir and cook until rice is cooked.
* Garnish with coriander leaves and serve with onion raita.

basic for various recipe: baingan, capsicum..
dhania 1 cup, methi2 tablespoon, jeera3tsp, pepper3tsp red chillies5 to 6.kadi patha, now fry these in little oil and keep it in a airtight container, u can now fry either baingan or capsicum with some onion and garlic and add the vegetables and fry well add salt and once cooked add this powder to the veggy and mix well, now add cooked rice with it which has been cooled and add a little ghee in the end and mix well garnish with some fresh coriander leaves chopped and pack, onion or tomato dahi raitha is great with these rice...

Sunakn, I will make this powder and keep but just sceptical about 2 tablespoon of methi, will it make my dish bitter.

Groundnuts 1/4th cup
Sesame 3tbsp
Coriander seeds 1tbsp
Cumin seeds 1/2tbsp
Garammasala powder 4cloves, 2 cardamom, small piece cinnamon
Whole garammasala 4cloves, 2 cardamom, small piece cinnamon
Sajeera 1/2 tsp
Brinjals (small) 400gms
Rice 3 cups (Rice cooker measuring cup)
Oil 3tbsp + 3tbsp
Chilly powder 2tsp
Turmeric 1/4th tsp
Amchur 1tsp
Salt to taste
Ginger Garlic paste one and half tbsp
Ghee 2tbsp
Coriander leaves hand full
Mint leaves hand full
* Cook rice normally (no need to add salt while cooking the rice)
* Dry roast groundnuts, sesame, cumin, coriander seeds and garammasala (4cloves, 2 cardamom, small piece cinnamon). Grind into fine paste. Keep aside
* Cut brinjals like plus sign and put in salt water. Heat oil and fry brinjals (squeeze the water before dropping them in oil) and cook till brinjals are cooked. Pull out from oil. Keep aside
* In same oil fry masala paste till oil leaves on sides. Add seasonings and amchur and fried brinjals, mix well and add 1/2cup of water and cook till gravy thicken. Off the flame.
* In a heavy bottomed pan, heat 3tbsp oil + 2tbsp ghee, and fry sajeera, whole garam masala (4cloves, 2 cardamom, small piece cinnamon) and ginger garlic paste. Fry for 2minutes.
* Add cooked rice and salt to taste. Mix well.
* Add brinjal gravy to rice and mix till masala is mixed well in rice.
* Finally, add chopped coriander and mint leaves.
* Dham the rice on low flame for 10-15Min's. (I put tawa on flame to dham the rice as shown in the below picture)
* Off the flame and Serve with Onion and Tomato Raita

I learned this dish from my cousin. I make this rice when we go for long drive, get to-gethers. This was a big hit dish in friends circle.

I'm glad u liked it. Using same masala I make bagara baingan (a slight difference in making) and stuffed brijal fry. But never tried with other rice items. If u r trying, any of it please share your recipe.
