• Peanut Laddoo

    Peanut Laddoo makes an easy and healthy snack for kids. Jaggery is rich in iron and peanut is an excellent source of protein.




    Ingredients

    1 Cup unsalted peanuts
    3/4 cup jaggery
    2 tbsp water
    1 tbsp ginger juice or 1 tsp Ginger powder/Saunth
    1 spoon of ghee or oil or rice flour



    Method:
    Roast peanuts for 15-20 minutes on a low flame.
    Once they are roasted, transfer them to the plate.
    Take off the skin when they are warm enough. Once they are cooled down it will be difficult to remove the skin.
    Take jaggery and water in a pan. Melt it on medium flame.
    Add ginger juice or dry ginger powder.
    Keep on stirring. Keep the flame low as it will be almost done.
    Pour few drops of jaggery liquid in a bowl of cold water and if it forms like a ball that means it is done.
    Add peanutsy to jaggery mixture and mix it very well. put off the gas stove.

    Grease your hands with ghee/ oil or rice flour.
    Roll laddoos when the mixture is hot enough.
