• Rice Kheer Pudding

    Rice Kheer is a very traditional Indian dessert prepared during festive season like Holi, Diwali, etc. Rice Kheer pudding is sweet, creamy, rich and makes your taste buds happy. Cooking chawal ki kheer is easy by just following few rules

    • Slow cooking is the mantra for perfect kheer.
    • Simmering rice and milk for 45-60 minutes gives a beautiful texture to pudding.
    • Use thick bottom pot to cook kheer.
    • Stir it every 2-3 minutes.
    • Kheer is done when rice is cooked completely and milk is thick.

    Hindi Version

    1/4 cup rice 1/4 कप चावल
    5 cups whole milk 5 कप प दूध
    1/4 cup sugar (adjust to taste)
    tsp cardamom powder टीस्पून इलायची पाउडर
    5-6 almonds chopped 5-6 बादाम कटा हुआ
    5-6 cashews chopped 5-6 काजू कटा हुआ
    10-12 raisins 10-12 किशमिश
    7-8 strands of saffron केशर (optional)

    English Version

    1. Wash rice, changing water 2-3 times.
    2. Soak rice in water for 10 minutes and then strain all the water from rice.
    3. Keep Milk for boiling on medium heat.
    4. Add rice and cook until the rice is tender and the milk is creamy and reduced to about half. Stir often to ensure the milk does not burn in the bottom of the pan.
    5. When Rice is half cooked add dry fruits, sugar. And let it simmer for a few more minutes.
    6. When rice is cooked and milk is thick add cardamom seed powder and saffron.
    7. Turn off the heat.
    8. As kheer cools of will become thicker in texture.
    9. Kheer can be served chilled or warm.

    1. Saffron is optional. Dry fruits use as per your choice.
    2. You can also 1 spoon of rose water.
